The Route

Destinations

Eight remarkable destinations, each revealing a unique facet of India’s culinary heritage.

Days 1 – 2

Delhi

Imperial Grandeur & Culinary Heritage

Your journey begins in New Delhi, a city where centuries of history unfold through grand avenues, Mughal architecture, and vibrant cultural layers. You are welcomed into The Imperial, an iconic landmark reflecting colonial elegance and timeless charm.

The culinary journey begins intimately at the home of Chef Jyoti Aggarwal, where you are introduced to the foundations of North Indian cooking. Old Delhi reveals its vibrant beauty through a rickshaw ride into Chandni Chowk — jalebis, paranthas, and the historic flavours of Karim’s and Moti Mahal.

Days 3 – 4

Lucknow

Nawabi Elegance & Awadhi Flavours

Arriving in Lucknow, you step into a world shaped by nawabi grace — a culture defined by refinement, poetry, and deeply rooted culinary traditions. Explore Bara Imambara and the atmospheric ruins of the British Residency.

As evening falls, the city’s culinary soul comes alive in Chowk Bazaar — delicate Galouti Kebabs, Sheermal, and vibrant street chaat. A private Nawabi residence offers candlelit dining reflecting the elegance of a bygone era.

Days 5 – 6

Agra

Mughal Legacy & Timeless Romance

Agra offers one of the most profound experiences — witnessing the Taj Mahal under both moonlight and sunrise. Marble glows softly under the night sky; at sunrise, warm hues reveal intricate inlay work and perfect symmetry.

Explore Agra Fort, visit a marble inlay atelier where artisans continue centuries-old techniques, and conclude with an intimate Mughlai cooking experience in a local home.

Days 7 – 9

Jaipur

Royal Heritage & Rajasthani Traditions

The journey unfolds through Rajasthan’s changing landscapes, with stops at Fatehpur Sikri and the striking Chand Baori stepwell. In Jaipur, explore the iconic Hawa Mahal, Amber Fort, and City Palace.

A deeply personal experience awaits in a traditional haveli, where you join a local family in preparing Rajasthani dishes such as dal baati churma — tradition, hospitality, and home-style cooking.

Days 10 – 11

Chettinad

Bold Flavours & Heritage Living

Chettinad introduces you to one of India’s most distinctive culinary regions, known for its bold use of spices and deeply layered flavours. Stay in a restored Chettiar mansion reflecting a rich trading heritage.

Prepare and enjoy signature dishes such as Chicken Chettinad and Mutton Chukka, gaining insight into techniques and traditions passed through generations.

Days 12 – 13

Madurai

Temple City & Street Food Culture

Madurai is one of India’s oldest living cities, where spirituality and daily life exist side by side. Experience the city through its vibrant street food culture — tasting regional favourites across bustling markets.

The Meenakshi Temple offers a deeply atmospheric experience, especially in the evening when the temple glows under soft light. Intricate architecture and spiritual energy create a powerful connection to South India’s heritage.

Days 14 – 16

Kochi & Kerala

Coastal Flavours & Backwater Serenity

In Kochi, history meets the sea. A sunrise harbour cruise introduces you to coastal life, where Chinese fishing nets rise and fall against the morning light. At the home of Nimmy Paul, a traditional Syrian Christian kitchen welcomes you.

Board a private houseboat and drift through tranquil waterways. The hills of Periyar offer spice plantations, forest air, and immersive culinary experiences rooted in local produce.
